may i share with you something i concocted yesterday?
it?s a british-like soup made with wholesome goodness!
what you need:
about 750g sweet potatoes
500g carrots
about a cup or two of fresh orange juice
a block of coconut cream ? which you can purchase from an oriental shop
some 100-200ml of milk
a tablespoon or two of Kikkoman soya sauce
some salt
some sprigs of fresh coriander ? chopped
a large enough pot (preferably) with a heavy lid
freshly boiled water
this is how i created it:
*first peel the sweet potatoes and chunk them and then plonk them into the pot, cover them with just enough freshly boiled water, set it to boil on high.
*meanwhile, peel and chunk the carrots and likewise plonk them into the pot, with the heat reduced just to simmer?. cover with the lid and let the roots boil till soft.
*(if you like you could get on with some other work if you need to ? e.g. i was doing a bit of programming!? and just keep an eye that the contents in the pot don?t boil over)
*after some 20-30 minutes the roots ought to be soft enough for you to mash them with a masher (?!) or an electric food processor (if you have one, i don?t).
*once you have them quite nicely mashed, add the block of coconut cream, soya sauce and/or salt and some of the orange juice to the mash? and stir well? add in the milk and rest of the orange juice intermittently and leave to simmer (you could turn off the heat if you like) and avoid splattering by stirring occasionally.
*it should be ready in about 5 minutes and you could then add the chopped coriander and serve with fresh/toasted bread with some butter for spreading?. bon appetite!
